can someone shed some light on the speaker volumes. i.e should the center speaker be higher or lower than the 2 front & what should the 2 surround be set to.

It depends on the acoustics of your room and the speaker placement. Generaly though the fronts and center should be the same volume.And the rears slightly louder but only a notch or two

Most A/V amps have a test tone thing that cycles through the speakers - set it so that the volume is the same for each speaker, and you should be sorted.
